The little Coffee Cake.

Baking has always been one of my favorite ways to unwind, and during the Covid-19 lockdown, it was one of the few activities that brought me peace. Solitude provided a time to press pause and reset on many of life's demands. For me, it produced a space to learn and grow with trial and error, igniting old passions, and revealing new ones.


While exploring my love for baking, I developed a recipe for the perfect coffee cake. This simple coffee cake is an adaptation of recipes found online and in cookbooks, personalized for my taste. It's honestly one of the best cakes I've made in a long time, having received positive reviews from friends and family.

Nescafe infused Coffee Cake with Espresso Cream Cheese Frosting


Ingredients


Cake:

2-3 tbs coffee powder

1 tbs cinnamon

1tbs cocoa powder

2 tsp milk (optional)

1 1/4 cup plain flour

2 1/2 tsp baking powder

3/4 cp brown sugar

Pinch of salt

1/3 cp water

3/4 cp butter or oil

3 large eggs


Icing:

8 oz cream cheese

1/3 tsp coffee powder

1/2 - 1 cup icing sugar

Yogurt Fruit and Nuts Mix



Directions


Combine dry and wet ingredients.

Mix well until sugar is mostly melted and coffee is well incorporated into the mixture.

Pour your batter into a buttered baking pan and bake for 40-45 mins at 350 degrees (or until cooked). Cool completely.


Mix coffee powder with room-temperature cream cheese (if your coffee powder comes in large grains dilute in water to make a paste and add to cream cheese). Taste test regularly to determine your preferred strength. Add sugar according to your desired sweetness. Mix.


Apply icing and dress with Yogurt Fruit and Nuts Mix.
